Wenesco's new
system makes it possible to prepare, cook, garnish, and serve fragrant
sweet or savory crepes in a very short time (UP TO 120
CREPES PER HOUR!!).
The system is extremely easy to use and requires only the simplest and
quickest maintenance. It is a new idea to fulfill
your ice cream, sandwich, and traditional recipes. This model
can cook up to four crepes at once.

Model CR 1040 is ideal for fast-food restaurants
and caterers. The
appliance is composed of an 8" x 40" Teflon-coated
aluminum (OR uncoated cast iron) hot
plate and a sliding carriage dispenser used for holding and evenly spreading the
crepe batter the full length and width of the
plate. The batter is dispensed left to right in the shape of a
long rectangle -- not a circle -- that is scored by the cook to create 3 or 4
actual size squarish crepes ready for filling.

Here's how you use
it.
1. Heat the hotplate to 400 F (this takes 8 to 10 minutes).
2. Whisk 1 lb. of Easy Crepe batter with 24 oz of water
until there are no more lumps. Depending upon
ambient humidity, the amount
of water may vary by 1 or 2 oz..
3. Pour the mixture into the carriage.
4. Adjust the metering screw to the desired crepe thickness.
5. Slide the carriage to the end of the hot plate.
6. Fully squeeze the carriage handle and pull with a constant motion.
7. Release the handle an inch before reaching the end of the hot plate.
The result is a layer of batter that
conforms to the full length and width of the hot plate.
8. After the crepe batter has been spread,
use the side of your spatula to score the batter in 2 or 3 places to
create the number of finished crepes you desire.
9. Next, place the stuffing
ingredients onto the crepes.
9. While they are still cooking, slightly
separate the crepes using a plastic spatula.
10. Check whether the crepes are done by slightly lifting
a corners. The crepe will take
another 30
seconds
to 1 minute 30
seconds to cook depending upon the stuffing used.
11. Fold the crepes and remove to serving plates.
